Quincy is Sauvignon on sand and gravel, and it ripens early and finely. Thirty-year-old vines, certified organic, soil worked by hoe and hilling rather than spray. Vinified in steel with six months on fine lees and no oak at all, so the variety stays pure and the mineral line stays sharp. Pale gold with green flashes.
