Kimmeridgian marl — the same fossil-rich limestone that gives Chablis its backbone — here lending flesh and structure to Sauvignon. Certified organic across 3.3 ha, treated with copper, sulphur and essential oils. Five to seven days of cold stabulation builds the aromatics, six months on fine lees builds the body. Generous, but never loose.
