Forever an apprentice. From Poligny, Yves Roy makes Jura wine with nothing added, from vines that are sometimes more than a hundred years old.

A name as a promise
Yves Roy came to the Jura in 2014 and learned the craft under Valentin Morel of Les Pieds sur Terre, in Poligny. With the 2020 vintage he released his own label, alongside his partner Christelle. The name Nøvice is a reminder: you never finish learning a craft. Stay curious, stay humble and keep learning.
Old vines on limestone
The estate covers around five hectares on the limestone-rich hillsides around Poligny, certified organic and biodynamic. At its heart are old Savagnin and Poulsard vines, some of them up to 120 years old. Yves has also planted Chardonnay, Trousseau and Pinot Noir.
Nothing added
In the cellar there’s no room for oenological products. Native yeasts only, no sulphites, no fining and no filtration. The wines usually spend about a year in tank, then finish their ageing in barrel.
The cuvées
From the estate’s own Côtes du Jura vineyards come Merci and Jaja (Poulsard), Le Trousseau, Tu connais pas Raoul ! (Pinot), Trouillot (oak-aged Chardonnay) and the orange Manuel Millénium from Savagnin. Boutasse is a Chardonnay aged three years in a 500-litre barrel.
Yves also works with grapes from grower friends outside the Jura, bottled as Vin de France: a Syrah from the Ardèche, a Pinot from Alsace, Back to The Nature from Villard Blanc and Villard Noir, and the sparkling Jus de la Folie.
