About Sauvignon Blanc

Sauvignon Blanc has its home in the Loire, around Sancerre and Pouilly-Fumé, but it is now at ease everywhere from Bordeaux through Styria to New Zealand. It is a grape that speaks loudly of the place it grows: from flint and herbs on limestone soils to exuberant fruit in warmer regions.

Character

Typical are aromas of gooseberry, boxwood, elderflower, citrus and freshly cut grass, often with a mineral, lightly smoky touch. What connects the styles is the fresh, crisp acidity and a taut, refreshing finish.

In natural wine

Sauvignon Blanc shows a different side in natural wine. Without the polished, aromatic supermarket style, the grape becomes more exciting: spontaneous fermentation tames the loud fruit and brings texture and depth. Some skin contact gives lightly orange, spicy versions, while pure, direct cuvées put all their energy into the glass.

At the table

A generous companion at the table: from goat’s cheese, oysters and asparagus to ceviche, sushi and green, herby dishes. The lively acidity cuts through fried food and oily fish and keeps every bite fresh.
