White Chinon is rare — barely a sliver of the appellation — and this is why it's worth hunting. Chenin from the limestone slopes of Panzoult, hand-picked, direct-pressed, fermented on native yeasts and rested six months in steel. No filtration, no fining, no make-up. Floral lift over a straight, chalky spine.
