Chinon Blanc
€ 15
White Chinon is rare — barely a sliver of the appellation — and this is why it's worth hunting. Chenin from the limestone slopes of Panzoult, hand-picked, direct-pressed, fermented on native yeasts and rested six months in steel. No filtration, no fining, no make-up. Floral lift over a straight, chalky spine.
Producer: Domaine du Trait · Appellation: AOC Chinon (Coteaux de Panzoult) · Grape: 100% Chenin Blanc · ABV: 12% · Cellar 3–5 years · Organic farming, minimal intervention

Domaine du Trait
The home estate behind Honorie. In Crouzilles, in the heart of Chinon, Hadrien Boucard and Erwan Leteurte work their vines with a draught horse — organic, patient and free of artifice. This is where it all begins.
