Whole-bunch carbonic maceration on Cabernet Franc — an unusual choice in Chinon, and a very good one. Hand-picked from limestone hills above the Vienne, fermented intracellularly, aged briefly, bottled young. All the perfume and none of the grip: a Chinon built for drinking now, slightly cool, in quantity.
