Cabernet Franc on Saumur's clay-sand over limestone, farmed in organic conversion at 30 hl/ha. Gently destemmed, three to four weeks on skins with wild yeasts and no additions, then six months in barrel — just enough oxygen to polish the tannin without covering the fruit. Ripe, savoury and properly digestible.
