Built from the estate's still rosé and given a second fermentation in bottle, then eighteen months on lees. The long ageing buys a fine, persistent bead while the Cabernet Franc keeps its crunch. Tender rather than austere — it works as an aperitif and keeps working right through to the strawberry tart.
